A cozy bean guide.

This isn’t a recipe—it’s an approach to crafting flavor. So, more like a guide, if you will. Much like our winemaking, this process layers complexity to create something truly special. Inspired by my daughter Fanny (and her book Always Home), this method elevates beans from a simple ingredient to the star of the table. It’s safe to say I’ve never found beans all that interesting until I began making them in this fashion. I hope you enjoy this guide to beans as much as my family and I do.

  • Start with quality dried beans —

  • Here’s where the magic happens —
    • Add large dice of celery, carrot, onion, fennel, a minced jalapeño or serrano, and coarsely chopped garlic.
    • For extra depth, toss in a few tomatoes, Italian parsley, and green onions.
    • Then, tailor your spices and herbs to taste—fresh thyme, oregano, bay leaves, coriander seeds, ground cumin, sweet Spanish pimento, black pepper, or whatever your pantry inspires.
    • Simmer for up to three hours until tender, letting the aromatic steam hint at the savory delight to come. For a hearty winter meal, pair your beans with grilled sausages and a glass of 2021 Singer Syrah.
