This isn’t a recipe—it’s an approach to crafting flavor. So, more like a guide, if you will. Much like our winemaking, this process layers complexity to create something truly special. Inspired by my daughter Fanny (and her book Always Home), this method elevates beans from a simple ingredient to the star of the table. It’s safe to say I’ve never found beans all that interesting until I began making them in this fashion. I hope you enjoy this guide to beans as much as my family and I do.
Add large dice of celery, carrot, onion, fennel, a minced jalapeño or serrano, and coarsely chopped garlic.
For extra depth, toss in a few tomatoes, Italian parsley, and green onions.
Then, tailor your spices and herbs to taste—fresh thyme, oregano, bay leaves, coriander seeds, ground cumin, sweet Spanish pimento, black pepper, or whatever your pantry inspires.
Simmer for up to three hours until tender, letting the aromatic steam hint at the savory delight to come. For a hearty winter meal, pair your beans with grilled sausages and a glass of 2021 Singer Syrah.
